You don't have to skip the weekend brunch with its fine, freshly baked piece of bread and butter or cheese. Since many at AURUM shared the same dilemma: “Eat or leave the piece of bread baked with love by the sister and save the carbohydrates…?” we rolled up our sleeves and tried out some low carb bread recipes for you. This cauliflower bread recipe is simple, healthy and particularly delicious.

Ingredients

  • 1 head of cauliflower
  • 6 large eggs, separated
  • 1.5 cups of almond flour (150 g)
  • 0.25 cups grated parmesan cheese, optional (25 g)
  • 5 cloves of garlic, chopped
  • 1 tablespoon of baking soda
  • 5 tablespoons of butter, melted
  • 1 pinch of salt
  • Italian spices
  • Sesame seeds or cumin for garnish
  • Fresh parsley and fresh rosemary

Creativity shouldn't stop here: you can experiment with chia, hemp seeds, linseed, pumpkin seeds, sunflower seeds and macadamia nuts, for example!

Instructions

  1. Heat the oven to 180°C, grease the kitchen tin with a little butter.
  2. Clean, wash, cut the cauliflower and slice it in a food processor or blender until you have a rice-like consistency.
  3. Place the chopped cauliflower in a large bowl and steam for about 4 minutes until it releases the liquid. Let cool down.
  4. Transfer the chopped, cooled cauliflower to a cheese cloth and squeeze as much water out of the cauliflower as possible.
  5. Separate the egg yolk from the egg white. Beat the egg whites with a blender until stiff as fresh snow.
  6. Place 0.25 of the beaten egg white in the bowl with the egg yolks. Add the almond flour, the parmesan, if necessary the garlic, the baking powder, the butter, the salt and the Italian spices. Mix gently with a rubber spatula until everything becomes a mass.
  7. Add the rest of the protein, cauliflower and Italian spices. Mix the ingredients carefully. Do not mix too much as this will break down the protein.
  8. Put the mixture in the greased kitchen pan and sprinkle with sesame, parsley and rosemary. Bake for 45-50 minutes, or until the bread is golden brown.

Let cool, then cut into slices and serve as desired.

Toto Wolff’s Journey Towards a Balanced Diet: Lessons Learned from Late Nutrition Awareness
Good nutrition is key to overall health and well-being. However, many of us only pay attention to what we put into our bodies later in life. In this blog post, we will learn from someone who only started caring about nutrition in their 30s: Toto Wolff, Austrian motorsport executive and former racing driver, currently serving as the CEO and Team Principal of Mercedes-AMG Petronas Formula One Team, shares his experiences and insights on creating a balanced diet that works for him. Although he "loves Oreos", he wouldn't eat them, and if he did, in moderation.
